Green Curry Guacamole

Does your New Years Diet have you dying for flavor?!?  Missing those boneless chicken wings with chipotle sauce… Street tacos and ice cold beer… Blue cheese bacon burgers?  Well – who isn’t!

Sorry love… But those beach bodies weren’t made off of grandma’s killer mac n’cheese.

So if your feeling the clean eating blues, are struggling through your first days back to Paleo, or are trying to battle your way through your first Whole30… why not try adding some flavor to your currently bland palette?  Give this a try!

Green Curry Guacamole

2  Ripe Avocados
1/4  Cup Coconut Milk
2tbs Green Curry Paste
1tbs Lemon or Lime Juice

Ok guys this is soo easy…

Place your avocados into your food processor.  I also added some lemon juice to keep my avocados nice and green.  In went some coconut milk, and my green curry paste to taste.  Mix until smooth and creamy.  I wanted mine to have lots of flavor and a smooth texture, so I added some more curry paste and coconut milk until I was satisfied.

I loved the end result.  Creamy but spicy!  Smooth but defiantly not boring!  Better yet – I later added more coconut milk and used the guacamole as a base for a cream sauce that I served with zucchini noodles.  Two birds with one stone!  Now that’s my kind of cookin!
